Welcome

Welcome to Gluten Free and More! Our family is gluten and dairy free (five of us). It has made a big difference in my health and I know my family too. I will post various things to this blog when I have a chance. (Which is very limited.) In the meantime, visit The Pratt Family Allergy Free Cookbook and Resources for more information on a gluten and dairy free diet. (It also include other allergies and resources too.)

  1. Thank you for a wonderful resource. I made a bread using your yeast bread GF flour blend #1 and it worked out really well with my technique without guar gum. My technique failed on just about every internet recipe until I found yours! The bread is very flexible, moist, fluffy and of a medium texture. Your blend works well for addition of seed meal, nut meal and protein flours in place of the 2 tablespoon tapioca/flaxmeal.
